Day 15: Halfway Through, I’m Glowing

My skin is looking incredible the last few days. Gotten a lot of compliments that I’m glowing. I know I’m not pregnant, so cleaning up the diet with real, unprocessed foods must be the contributing factor.

Some foods from the last several days.

Baked chicken breast and creamed spinach. This was the first time cooking chicken breast this way. I brined it for 3 hours, coated it with seasoning, and then baked it. So moist. The chicken recipe was from my Well Fed cookbook and the recipe can also be found here. I highly recommend it! The creamed spinach was based on a recipe I saw in the Paleo Comfort Foods cookbook. Super easy and really tasty (I love spinach).

I made chili this weekend in the crockpot, based on this recipe by Paleo Newbie. The ground beef is from the eighth of a cow I bought. Grass-fed and organic and delicious. Topped it with half an avocado and had an apple on the side.

I also bought some ling cod from a friend after a fishing trip he took. Baked ling cod and steamed green beans with extra virgin olive oil and almonds.

I was on a mission this past weekend to bake with some pumpkin puree. I made these Bacon/Chive/Apple/Pumpkin Coconut Flour Biscuits courtesy of The Urban Poser. I think this is the first recipe I’ve followed using coconut flour that was successful.

I made some Pumpkin Cookies from Multiply Delicious ‘ site. I didn’t have a banana, so used dates I ran through the food processor. These didn’t hold as well as I’d wanted, but they’re really tasty. I put a little almond butter and coconut cream on one and it was heavenly!

I also made some Pumpkin Raisin Bread, but I can’t find the recipe again. Shoot! There are tons out there though. So good for breakfast. I didn’t use much honey in this to sweeten because the raisins added enough.

Day 11: Donuts Make Me Go Nuts

Been super grumpy the past couple days at work. Think I need to eat a bit more. The other day I had a 2 1/2 hour meeting at work and the entire time I was sitting in front of a box of donuts. Seriously almost lost my mind smelling the sugar and watching others slowly indulge. 

Here are some meals from the past couple days. 

Day 9 Breakfast: Egg, chicken sausage, and mix of venison, ground pork, peppers, onions, celery. 


Day 9 Lunch: Salad with marinated chicken, Romanesco sauce, guacamole, grape tomatoes. I know the photo doesn’t look pretty, but it tasted good!


Day 9 Dinner: Chicken tacos wrapped in butter lettuce and a half sweet potato. No photo.

Day 10 Breakfast: Eggs, lox, and sautéed kale and mushrooms.


Day 10 Lunch: Stuffed bell pepper (venison, ground pork, bacon, onions, celery, parsley), green beans with almonds, and grape tomatoes. 


Day 10 Dinner: Roasted chicken and steamed broccoli. 


Day 11 Breakfast: Mix of venison, ground pork, peppers, onions, celery. Side slice of pumpkin bread and coffee with coconut cream. Hello weekend! The pumpkin bread recipe is courtesy of Comfy Belly. I used the recipe with the banana and I added some raisins, which taste delicious and add some sweetness since I didn’t add all of the honey the recipe called for. 


Speaking of the weekend, I use this sleep tracker app called Sleep Cycle and last night I logged a 99%. That has never happened. So good. 



Day 8: Foods

Quickly threw some cut up spicy Italian chicken sausage, kale, and grape tomatoes in a mug to eat on my way to work.

Day 7: Starting the Routine

First time back to the gym today after my third hernia surgery. So excited to get back to a routine. 


I went to El Gaucho last Saturday (my first time) and had left overs, so I finished those. Filet mignon, broccoli, and asparagus (no picture). 


Chicken Pad Thai. Seriously this recipe is so good and I’ve made it several times. I use my veggie spiral slicer to make “zoodles” (or zucchini noodles). Don’t even miss the rice noodles.

Leftover dinner from Friday night: marinated chicken on a plantain tostada with ranchero sauce. Recipe here. Unfortunately the tostada didn’t turn out so well. Tasted great, but didn’t have the texture I was hoping for.

Day 6: Breakfast

Start of my day 6!

Day 2: Avoiding Halloween Treats

Planning my 30 Day Challenge around Thanksgiving was more important to me than Halloween, but saying no to treats all day wasn’t fun…

Didn’t take photos of my breakfast and lunch, but here’s what I ate.

Breakfast: Garlic Herb chicken sausage (from Trader Joe’s – so good), steamed broccoli, mashed yams with coconut milk.

Lunch: Salad of kale, roasted chicken, grape tomatoes, mushrooms, mixed veggies, almonds, and guacamole.

Dinner: Roasted chicken, green beans with extra virgin olive oil and sliced almonds.
